Cooking at our house sometimes involves smoke alarms and band aids, so imagine my glee at the numerous requests I've had for this recipe.
The cheesy potatoes were at hit at this year's Christmas party and here are all the details. FYI -- I used a bag of frozen hash browns, but thawed them a bit before mixing up the ingredients.
1package hash brown potatoes
16 oz. sour cream
16 oz. shredded cheddar cheese
1 small onion (optional)
1 can cream of chicken soup
3/4 stick butter or margarine, melted
1/4 c. Ritz cracker crumbs
Preheat oven to 350 degrees. Grease 9 x 13" pan with cooking spray. In large bowl, mix hash browns, sour cream, butter, cheddar cheese, onion (optional) and soup.
Bake 45 minutes.
Remove from oven and sprinkle cracker crumbs on top of potato mix. Bake another 15 minutes or until golden brown.
